zoe_trope, here's an amazing banana muffin recipe:
“Dear God" Banana Chip Muffins
1/2 C. (one stick) Butter
1 C. Sugar (I used 1/2 C. honey + 3 Tbsp. sugar, but I want to try just sugar next time)
1 egg
4-5 ripe bananas (I used 5)
1-3 tablespoon instant espresso granules, dissolved in 1 tablespoon water (I used 2, but will use 3 next time)
1 teaspoon vanilla extract
1-3/4 cups all-purpose flour
pinch salt
1 teaspoon baking powder
1 teaspoon baking soda
1/2 cup semisweet chocolate chips (you can use up to one cup, for more chocolatey goodness)
Spin the wet ingredients in the food processor until completely blended. Add the dry and process until it's batter (about a minute). (I don't a processor, so I just softened the butter first, mixed butter & sugar together, added egg, vanilla, espresso, and bananas, mixed, then mixed in the pre-combined dry ingredients.)
Put into muffin tins -- about 2/3 full -- and bake at 350.
10 minutes for mini muffins, 16 minutes for full muffins
