Summer kitchen trick

I love quick breads -- banana breads, especially (I actually have a small collection of banana bread recipes now), pumpkin bread, poppyseed bread, etc. It's hard to make them in the summer, though, because they usually have to be in the oven for an hour or more, and the oven is heating the house all that time. A few years ago I discovered a good summer trick -- mini-loaves! One regular loaf usually makes four mini-loaves, just split the batter into the four loaf pans prepared according to the recipe, then bake for 20-25 minutes instead of the 60-70 minutes the big loaf takes. Can make a big difference on how heated up the kitchen gets! Depending on your oven, you may want to rotate the positions of the little pans partway through baking.
A recipe for one loaf of bread will usually fit in a muffin tin, also, making 12-15 muffins in 15-30 minutes, if you're having trouble finding mini loaf pans.
